TURKEY TOSTADA: WITH GRILLED TURKEY BREAST, FRIJOLES REFRITOS, GUACAMOLE, AND ROASTED TOMATO SALSA
Tostadas are fried corn tortillas often topped with beans, meat, tomatoes, lettuce, and salsa. They are a simple main course to enjoy for lunch or lighter dinners. When they include grilled turkey cutlets and crispy tortillas dressed with Frijoles Refritos, guacamole, and Roasted Tomato Salsa, they are memorable.
Serves 6
ROASTED TOMATO SALSA
4 plum tomatoes
1 medium-size yellow onion, quartered
4 cloves garlic
2 jalapeño chiles
2 arbol chiles
¼ cup red wine vinegar
¼ cup loosely packed fresh cilantro leaves
TOSTADAS
2 cups canola oil, for frying
6 (6-inch) corn tortillas, purchased or homemade (page 9)
1 ½ pounds fresh turkey breast, cut into about ¼-inch-thick slices and pounded flat into cutlets
Kosher salt
2 cups Frijoles Refritos (page 135), warmed
2 cups guacamole (page 5)
½ cup olive oil
¼ cup red wine vinegar
3 cups very thinly sliced romaine lettuce
Freshly ground black pepper
1 cup pico de gallo (page 2)
1 cup crumbled queso fresco
